When thinking about Spain you probably imagine coastlines and dry wasteland on the countryside but the community of Cantabria is an exception to this as it’s part of the green lung of Spain. It’s here where Ruben and David started with their micro-distillery Siderit in the town of Torrelavega. All products are hand-crafted and in their production process they stick to three pillars: Hard work, good quality raw materials and the best technological instruments will make their distilled products synonym to quality, exclusivity and perfection.
They apply fractional distillation to produce their London Dry Gin, the Siderit Hibiscus Gin, aiming for the purest result in the distillation. Producing in this green and natural environment with the most technological methods has always been an inspiration to Siderit and it has influenced them in the search of the right products and botanicals for their Gin. The alcohol used to distil their gin comes from rye and diluting the distillate with water retrieved at sources in Ortigosa de los Montes at the northern side of the Sierra de Guadarrama. One of the most special botanicals they use in their gin is the hibiscus flower which delivers a softer but floral taste. What is different to the Siderit Classic Gin is that the accent is more on the Hibiscus or Jamaican flower. Here they macerate the Hibiscus flower for an extra 48h before adding it to the distilled Siderit Classic Gin. The result is an even more floral gin with a pink colour.
Another particular botanical in this gin is Rock Tea or Syderitis Hissopifolia which also explains the name of their Gin. Rock Tea only grows in the Picos de Europa or Peaks of Europe mountains and in combination with a total of 12 botanicals it really characterizes this Gin.
