About Trois Rivières Rum – Triple Millesime 1998 – 2000 – 2007
In Martinique, the month of February marks the new season for the sugar and rum industries. That’s when they cut the canes and start up the machines in the distilleries. Trois Rivières sugar cane grows on the plantations in the south of the island. Which is then carefully selected for its high sugar content. The cane undergoes a crushing first and is then grounded in the mills. The extracted cane juice is collected in channels. Then filtered and taken to the fermentation vats.
From year to year, the Trois Rivières Cellar Master supervises and collects the aging rums. This protects the remarkable vintages to produce the great Trois Rivières old rums. Old rum must spend at least three years in barrels. Extra-old rums spend a minimum of six years in barrels. This is to optimize interactions between the rum, the wood of the barrels and the hot, humid air of Martinique.
Trois Rivières Triple Millesime is the first multiple-vintage rum hors d’âge from the terroir of Martinique. This cuvée is therefore the result of a blend of 3 exceptional grands crus of the plantation, from 1998, 2000 and 2007. As a result, its smoothness and its delicate full-body make this rum outstanding.
First of all, this triple millesime has a gorgeous, bright golden color with amber highlights. Its aroma is silky and delicate. Next, it enters on notes of gingerbread, butter and jammed-fruit enhanced by notes of citrus fruit rinds. After airing, accents of spices arise and mingle perfectly with notes of prunes and dried flowers. Its taste is lively, rich and artfully balanced, with evolving notes of spices, white pepper and nutmeg. This Triple Millesime follows through on notes of fresh and candied-fruit. The finish is long and distinctively fresh. In conclusion, it stands out by its subtle notes of hazelnut and pleasant floral and aniseed accents.
